The BEST Peach Cobbler Cinnamon Rolls
I made these at home because I wanted a cozy bakery-style dessert that actually tastes fresh. The secret is using bread flour for that soft pull-apart texture and a thick peach cobbler filling that stays rich without making the rolls soggy.
Dough:
240g warm milk | 7g instant yeast | 67g sugar | 1 egg + 1 egg yolk | 57g melted butter | 360g bread flour | 4g salt | 1/2 tsp vanilla
Cinnamon Filling:
57g softened butter | 150g brown sugar | 1 tbsp cinnamon | pinch nutmeg
Peach Cobbler Filling:
2 cups diced peaches | 1/3 cup brown sugar | 1 tsp cinnamon | 1 tsp cornstarch slurry | splash vanilla | 1 tbsp butter | tiny squeeze lemon juice
Crumble Topping:
1/2 cup flour | 1/3 cup brown sugar | 1 tsp cinnamon | 4 tbsp cold butter
Steps:
1. Make the dough and let it rise until doubled
2. Cook the peach filling until thick and glossy
3. Roll out the dough, spread the cinnamon filling, layer on the peaches, and sprinkle crumble over the top
4. Roll tightly, cut 12 large rolls, place into pan, and proof until fluffy
5. Pour warm heavy cream around the rolls before baking, this is the soft center trick
6. Bake at 350°F until golden brown
7. Top with extra peaches, vanilla peach glaze, and more crumble
I love making these at home because I can control the peach-to-dough ratio and keep everything soft without becoming overly wet or gummy. My favorite trick is pouring warm heavy cream around the rolls before baking because it keeps the centers incredibly soft. Next time I want to try browned butter in the filling for an even richer flavor.
