Ingredients:
- 1 pound ground beef 🍖
- 1 can (15 oz) black beans, drained and rinsed 🫘
- 1 can (15 oz) corn, drained 🌽
- 1 can (10 oz) diced tomatoes with green chilies 🍅🌶️
- 1 packet taco seasoning 🌮
- 1 bag (8 oz) tortilla chips, slightly crushed 🥔
- 2 cups shredded cheddar cheese 🧀
- 1 cup sour cream 🍦
- 1/2 cup sliced black olives (optional) 🫒
- 1/4 cup chopped green onions (for garnish) 🟢
Consider swapping the ground beef for turkey or lentils for a healthier twist! Use black-eyed peas instead of black beans for a fun change.
Instructions:
1. Preheat your oven to 350°F (175°C). 🔥
2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat. 🍽️
3. Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir well to combine and cook for about 5 minutes to heat through. 🍳
4. In a large baking dish, layer half of the crushed tortilla chips at the bottom. 🥙
