Grilled Chicken & Broccoli Bowl with Creamy Garlic Sauce
Ingredients (Serves 1)
For the Chicken -
8 oz raw boneless, skinless chicken breast (Yields 6 oz cooked)
1 teaspoon olive oil
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1 tablespoon lime juice
For the Creamy Garlic Sauce -
2 tablespoons light mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1/4 teaspoon black pepper
1 clove garlic, minced
For the Bowl -
1.5 cups steamed or roasted broccoli florets
Instructions-
1. Prepare the Chicken:
In a bowl, mix the chicken with olive oil, paprika, garlic powder, salt, and lime juice. Let it marinate for at least 30 minutes.
2. Cook the Chicken:
Grill or pan-sear the chicken on medium-high heat for 5-7 minutes per side until fully cooked (165°F internal temperature). Let it rest before slicing.
3. Make the Creamy Garlic Sauce:
In a small bowl, whisk together the light mayo, Dijon mustard, garlic, lemon juice, and black pepper.
4. Assemble the Bowl:
Divide the steamed broccoli onto a plate or bowl, top with sliced grilled chicken, and drizzle with the Creamy Garlic Sauce.
