SAME DAY FOCACCIA BREAD

-2 cups warm water

-1 packet yeast

-4 1/2 cups flour (I used bread flour)

- 1 TBLS EACH- Salt, Sugar, olive oil

-Toppings of your choice

1. Add the water and yeast to a bowl and let sit for 5-10 minutes to activate.

2. Add all the ingredients(minus your toppings) and mix well, the dough will be sticky and that’s perfect! Cover and let rest for 15 minutes with tea towel covering it. Then stretch and fold the dough. Repeat 3 times.

3. On the 4th stretch and fold cover with plastic wrap and a towel and let sit for an hour and a half to rise. Wiggle the bowl to release the bubbles. Then pour into a 9x13 casserole dish with some more olive oil drizzled. Fold into thirds and flip over. Cover and let rest for another hour.

4.Dimple with your fingers, add your toppings and maybe more oil if needed. Bake at 450 F for 20-25 minutes
