Eat the rainbow!

One of my favorite ways to cover as many food groups as possible every day is to try and “eat the rainbow” with my toddler. We always like incorporating new foods or making new dishes from leftovers, and he’s already become such an adventurous eater!

Snacks were much less organized and not photographed, but he also had some strawberries, avocado slices, and a berries + veggies pouch.

Red: cherry tomatoes, strawberries

Orange: carrot spread quesadilla, pumpkin muffin

Yellow: eggs, bananas, yellow rice

Green: avocado, green beans

Blue: blueberries

Purple: berries pouch

Brown: pork nuggies

It’s not just about aesthetics; each color often signifies different vitamins, minerals, and antioxidants that are crucial for their rapid growth and development. For instance, reds like strawberries and cherry tomatoes are packed with antioxidants, while greens like avocado and green beans offer vitamins K and C, plus folate. Oranges and yellows, like pumpkin muffin or scrambled eggs, bring vitamin A for vision and immune support. Even blues and purples, such as blueberries and the berries in a pouch, are powerhouses for brain health! If you're looking to introduce more variety, here are some tips I've picked up along the way for getting 1-2 year olds excited about nutritious, colorful foods: Making Meal Prep a Rainbow Adventure: Shop Smart: When grocery shopping, try to pick at least one item from each color group. It makes it a fun challenge! Think about bell peppers in all shades, different berries, and a mix of green veggies. Fun Presentations: Serve food in creative ways. Use cookie cutters for sandwiches or fruits, arrange foods in a circle or smiley face. Sometimes, a simple divided plate makes all the difference, just like the ones we use for breakfast with blueberries and goat cheese scrambled eggs, or lunch with sliced banana and carrot quesadilla triangles. Involve Them: Even toddlers can 'help' in the kitchen. Let them wash berries, tear lettuce, or stir ingredients. My little one loves helping me add the green beans to dinner! Expanding Your Rainbow Palette (Beyond the Basics): Red: Beyond the familiar cherry tomatoes and strawberries, consider thinly sliced red bell peppers, raspberries, or even a small piece of apple with the skin on. Orange: Besides delicious pumpkin muffins and carrot quesadillas, try steamed sweet potato cubes, cantaloupe, or orange segments (deseeded and membrane removed). Yellow: Yellow rice and scrambled eggs are staples, but don't forget corn kernels (if age-appropriate), pineapple chunks, or yellow squash. Green: Avocado and green beans are excellent. Also, introduce steamed broccoli florets, peas, or a tiny bit of spinach blended into a smoothie. Blue/Purple: Blueberries are a hit! Blackberries, purple grapes (halved or quartered), or even a small amount of pureed beets can add purple. Brown/White: While not strictly part of the visual rainbow, these are vital. Think whole-wheat pasta, brown rice, oats, or cauliflower florets. Garlic parmesan pork nuggets are a great way to add protein! Handling Picky Eaters (It's Normal!): Exposure is Key: It can take 10-15 exposures for a child to accept a new food. Don't give up! Offer it repeatedly in different ways. Dips & Sauces: A little hummus, yogurt dip, or a mild cheese sauce can make new veggies more appealing. Lead by Example: Eat your own colorful foods with enthusiasm. Toddlers often mimic what they see. No Pressure: Mealtimes should be pleasant. Avoid making it a battleground. If they refuse, simply remove the food without fuss and try again another time. Embracing the 'eating the rainbow' philosophy has not only broadened my toddler's palate but also made mealtimes a lot more enjoyable and less stressful. It's a continuous journey, but seeing them explore new tastes and textures is incredibly rewarding!
