what I made vs what he ate

I try to keep weeknight dinners fairly simple because I don’t feel like cooking a big meal after a ten hour shift. Thankfully I have a kid who will eat just about anything!

I made a batch of chicken schnitzel over the weekend because it’s super easy to reheat and use in multiple meals throughout the week. Tonight we did pita sandwiches with chicken, cheese, & pesto. My son is a fiend for pickles so I also threw some of those on his plate, along with some strawberries for dessert. Overall I think this one was a win!

... Read moreAs a busy parent juggling long work hours, I’ve found that prepping versatile meals like chicken schnitzel ahead of time can be a lifesaver. Not only does it make weeknight dinners quicker, but it also allows for creativity throughout the week. For example, turning schnitzel into a pita sandwich with cheese and pesto adds new flavors while keeping the meal familiar for toddlers. Kids can be surprisingly unpredictable with what they actually eat, and in my experience, offering a variety of textures and tastes can encourage them to try more. My little one is obsessed with pickles, so adding a small side of pickles transformed the meal into a hit. Including fresh fruit like strawberries for dessert adds a sweet, healthy finish without much fuss. Reheating schnitzel is super easy and keeps it crispy enough to stay enjoyable. This strategy of batch-cooking and repurposing meals can reduce the stress of weeknight cooking considerably, especially when your toddler is open to trying different components on their plate. Sharing meals this way not only saves time but fosters a more relaxed dinner atmosphere. It’s one of those small tweaks that has made parenting mealtime a bit smoother on hectic days.
