Swim Queso Chicken and Rice
INGREDIENTS
2 Packets Knorr Mexican rice
3 Cups chicken shredded
1 (10 Oz can) rotel with green chiles
1 (4 oz can) green chilies
1 Packet taco seasoning
3 Cups chicken broth
16 Oz queso cheese
1 Cup shredded cheddar
1 Cup Colby and Monterey Jack cheese
Green onions for garnish (optional)
DIRECTIONS
🔥 Preheat oven to 350 degrees.
Mix Everything directly into the baking dish, combine the uncooked rice, chicken broth, rotel, green chiles, taco seasoning, and cooked chicken. Stir well to ensure everything is evenly distributed.
Sprinkle your shredded cheese evenly over the top of the chicken and rice mixture.
Cover the baking dish tightly with aluminum foil to trap the steam so the rice can cook properly. Bake for 45 minutes.
Remove the dish from the oven. Pour or spread the warm queso dip all over the top of the casserole.
Serve warm with tortilla chips for scooping, or spoon it into taco shells and Munch!
