Chicken Piccata

——Ingredients——
4 chicken breast (pounded thin)
1/2 tablespoon of salt (season both sides of the chicken with)
1/2 tablespoon of black pepper (season both sides of the chicken with)
1 cup flour
2 tablespoons olive oil
2 tablespoons butter
1 shallot (or small onion)
4 cloves of garlic
6 lemon slices
1/2 cup capers
6 tablespoons of butter
1 and 1/2 cups of chicken broth
The juice of 1 lemon
1/2 teaspoon of salt (or to taste)
1/2 teaspoon black pepper (or to taste)
Parsley for garnish
:
1. Pound the chicken breasts thin then season both sides of the chicken with salt and black pepper.
2. Lightly Dredge the chicken with flour
3. To a pan on high heat add olive oil and butter, then the chicken goes in
4. Cook the chicken for about 3 minutes per side and remove it from the pan
5. To that same pan add in the shallots and garlic and sauté for about a minute, then add in the lemon slices, capers, the 6 tablespoons of butter, chicken broth and lemon juice.
6. Season the sauce with salt and black pepper, return the chicken back into the pan and simmer for about 5 minutes until the sauce thickens up. Garnish it with some parsley and enjoy.
