2 large boneless, skinless chicken breasts (~1 lb), sliced into cutlets

Salt and freshly ground black pepper, to taste

½ cup all-purpose flour

2 tbsp olive oil

2 tbsp unsalted butter

3 cloves garlic, minced

1½ cups orzo pasta (9 oz / 250 g) uncooked

½ cup dry white wine (120 ml) or more chicken broth

2 cups chicken broth (480 ml)

1 cup heavy cream (240 ml)

¼ cup freshly squeezed lemon juice

Zest of 1 lemon

3 tbsp capers, drained

2 cups baby spinach

¼ cup grated Parmesan cheese (plus more for serving)

2 tbsp chopped fresh parsley

Instructions

1. Caramelize lemon slices: melt 1 tbsp butter in a skillet over medium heat; add lemon slices and honey; sear 1-2 minutes per side until golden; set aside.

2. Season chicken: season cutlets with salt and pepper; dredge in flour.

3. Cook chicken: in the same skillet, heat olive oil + 2 tbsp butter over medium-high; cook cutlets 3-4 minutes per side until golden and cooked through; remove and set aside.

4. Toast orzo & garlic: reduce heat to medium; add garlic + orzo; cook 1-2 minutes until slightly toasted.

5. Deglaze & add liquids: pour in white wine (or broth), scrape pan; stir in chicken broth, cream, lemon juice, lemon zest; bring to a gentle simmer.

6. Finish orzo & greens: simmer orzo 8-10 minutes until al dente; stir in capers, Parmesan, and spinach until wilted.

7. Return chicken & garnish: nestle chicken back into skillet, top with caramelized lemons and parsley; serve hot with extra Parmesan.
