หลายคนอาจเคยได้ยินคำว่า “โอโทโร่” (Otoro) ในเมนูซูชิ/ซาชิมิ แต่ยังไม่แน่ใจว่ามันต่างจากส่วนอื่นยังไง จากประสบการณ์ที่ไปลองที่ร้านทูน่าในแดกูอย่าง Gilbon Tuna (길본참치) บอกเลยว่าถ้าได้ชิมโอโทโร่ดีๆ สักครั้ง จะเข้าใจคำว่า “ละลายในปาก” ทันที โอโทโร่คือส่วนท้องของปลาทูน่าบลูฟินที่มีไขมันแทรกเยอะที่สุด เนื้อจะสีอ่อนกว่าส่วนอื่นและมีลายมาร์เบิลคล้ายเนื้อวัว เวลากินแบบซาชิมิจะให้สัมผัสนุ่มมาก ฉ่ำ และหวานมันแบบธรรมชาติ (ไม่คาว) ต่างจาก “อากามิ” ที่จะเนื้อแดงแน่นกว่าและไขมันน้อย ส่วน “ชูโทโร่” จะอยู่กึ่งกลาง—ยังมีความมันแต่ไม่ละลายเท่าโอโทโร่ เหมาะกับคนที่อยากบาลานซ์ความแน่นและความฉ่ำ ทริคเล็กๆ เวลาไปกินโอโทโร่ให้ฟินขึ้นที่เราชอบทำคือ 1) เริ่มชิมคำแรกแบบไม่จิ้มอะไรเลย เพื่อจับรสหวานมันและกลิ่นทะเลเบาๆ 2) คำถัดไปค่อยแตะโชยุ “นิดเดียว” (อย่าจุ่มจนท่วม) แล้วเติมวาซาบิปลายๆ จะช่วยตัดเลี่ยนได้ดี 3) ถ้ามีมะนาว ลองบีบเบาๆ กับบางคำ จะได้ความสดชื่นขึ้น โดยเฉพาะตอนกินหลายชิ้นติดกัน อีกอย่างที่สังเกตได้จากร้านที่แล่ดีๆ คือชิ้นโอโทโร่จะมีความเงา เนื้อไม่แตกยุ่ย และอุณหภูมิจะพอดี—ไม่เย็นจัดจนแข็ง เพราะถ้าเย็นเกินไป ไขมันจะไม่ “ละลาย” และความหอมจะไม่ออก ที่นี่เขาแล่สดด้วยมีดคม (เห็นเชฟทำแล้วรู้เลยว่ามืออาชีพ) และจัดจานมาสวยมาก มีวาซาบิ มะนาว และเครื่องเคียงสีเขียวช่วยเสริมรส ทำให้จานดูพรีเมียมสุดๆ ถ้าใครตั้งใจไปกินโอโทโร่แบบจัดเต็ม แนะนำให้ไปแบบ 2-3 คนเพื่อแชร์หลายส่วน จะได้ลองเทียบโอโทโร่กับชูโทโร่/ส่วนอื่นๆ สนุกมาก แถมเครื่องเคียงและอาหารทะเลรอบโต๊ะช่วยเปลี่ยนรส ไม่ทำให้เลี่ยนง่าย แล้วค่อยปิดท้ายด้วยโอโทโร่อีกคำ—ฟีล “จบสวย” มากค่ะ
