Fiery Cajun Shrimp Stuffed Jalapeños
Ingredients
For the Stuffed Jalapeños:
10 large jalapeños, halved and seeds removed
1/2 pound cooked shrimp, chopped
1/2 cup cream cheese, softened
1/4 cup shredded cheddar cheese
1/4 cup shredded mozzarella cheese
2 tablespoons sour cream
1 teaspoon Cajun seasoning
1/4 teaspoon smoked paprika
1 clove garlic, minced
2 green onions, finely chopped
1/4 cup cooked bacon, crumbled (optional)
For Garnish:
Fresh parsley, chopped
Extra Cajun seasoning for sprinkling
Directions
Preheat Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
Prepare Jalapeños:
Slice jalapeños lengthwise and remove seeds and membranes. Arrange them on the prepared baking sheet.
Make the Filling:
In a medium bowl, mix cream cheese, cheddar cheese, mozzarella cheese, sour cream, Cajun seasoning, smoked paprika, garlic, and green onions. Stir in the chopped shrimp and bacon (if using) until fully combined.
Stuff the Jalapeños:
Spoon the shrimp mixture generously into each jalapeño half. Ensure the filling is slightly mounded.
Bake:
Bake in the preheated oven for 18-20 minutes, or until the jalapeños are tender and the filling is bubbly and slightly golden.
Garnish and Serve:
Sprinkle with fresh parsley and a touch of Cajun seasoning. Serve warm and enjoy!
