Having tried the SEORAEJIB x Chef Yoon Nam-no collaboration myself, I can vouch for the exceptional quality and bold flavors brought to the table. Chef Yoon, known as the "Cooking Maniac," expertly infuses traditional Korean ingredients with a modern twist, such as aging the US pork skirt with red miso and Korean sake in the Misoyaki Galmaegisal. This deep marination results in a remarkably tender and flavorful cut. What stood out to me was also their smoked Black Pork Samgyeobsal, prepared using Singapore's first hay + oakwood Onggi smoking technique. The earthy aromas and smoky notes truly elevate the experience, setting it apart from typical Korean BBQ. Alongside the meats, the Cheesy Gyeran Jjim with molten cheese offered a comforting and rich side, balancing the meal perfectly. The Makkoli Sorbet was a refreshing finish, combining rice wine and lemon for a cool, tangy palate cleanser. For those looking for drink options, the Watermelon Soju Mix cocktail and its non-alcoholic mocktail counterpart were vibrant and easy to share, making it a fun addition to the meal.
