Garlic Herb Lamb + Roasted Veg (meal-prep friendly)
Ingredients
• 1 lb lamb chops or lamb loin/leg slices
• 2 tbsp olive oil
• 3 garlic cloves (minced)
• 1 tsp rosemary (or Italian seasoning)
• Salt + pepper
• Veggies: zucchini, bell peppers, onions (or a frozen mix)
Recipe
1. Marinate lamb in oil + garlic + seasonings (10 min or overnight).
2. Sear lamb 3–5 min per side (depending on thickness).
3. Roast veggies at 425°F for 18–22 min, toss halfway.
