Yesterday I smoked my first rack of Texas-style dino beef ribs on my pellet smoker, and they turned out better than I expected. I kept it simple with Hardcore Carnivore Black seasoning, low-and-slow heat, and let the beef do the talking.
No sauce. No wrap. Just smoke, patience, and a great bark.
