Chicken alfredo | cook with me 🍝✨
Since it’s a snow day, come make some chicken Alfredo with veggies! If you turn the volume up you’ll hear everything cooking along with kitten chaos in the background 😂
👩🏻 Home Recipe 🍳
I started off with boiling some water for the fettuccine, and in a second pan I started with some cooking oil to get the pan ready. Then I added in some stir fry veggies, they’re my favorite you use whatever you want ✨ I just added in about a quarter cup of them, since my kids think that veggies will off them😂😭 I also used left over crispy chicken, I just
chopped them up and added in after the pasta was all done.
You’ll also see me take the pasta water and put it in a jar! What is this for?! My lovely beauties 🪴🪴🪴 of course I use pasta water for my plants! Remember to let it cool completely so you don’t shock your babies.
This amount was made for 4 people, I did not use all the Alfredo sauce, so put the rest in the fridge for some dipping sauce tomorrow for lunch!

Hey everyone! So many of you asked about the best veggies to add to chicken alfredo after my snow day cook-along, and I totally get it! While my original recipe mentioned 'stir-fry veggies,' I know sometimes we need a little more inspiration, especially when trying to get those greens into our meals – or past our picky eaters! For me, making chicken alfredo on a snowy day is all about comfort, but that doesn't mean sacrificing nutrition. Here are some of my go-to vegetables that really shine in this creamy dish, along with some tips to make them work for everyone at your table: Broccoli florets: This is probably the most classic choice, and for good reason! Broccoli adds a lovely crunch and a pop of green. I usually steam my broccoli until it's tender-crisp before adding it to the alfredo sauce. This way, it retains its vibrant color and a bit of texture. If your kids aren't fans, try chopping them really tiny or even roasting them first with a little garlic for a sweeter, nuttier flavor that blends in beautifully. Fresh Spinach: Oh, spinach! It’s almost a magical vegetable because it wilts down to practically nothing, making it super easy to 'hide.' Just toss a couple of handfuls into your hot alfredo sauce right at the end, stir until it’s wilted, and it’ll disappear into the creamy goodness, adding a nutritional boost without much fuss. This is my secret weapon for those veggie-averse little ones! Sautéed Mushrooms: If you love an earthy flavor, mushrooms are fantastic. Sauté sliced cremini or button mushrooms in a separate pan with a little butter and garlic until they're golden brown before stirring them into your alfredo. They add a wonderful umami depth and a tender, meaty texture that complements the chicken perfectly. Sweet Peas: For a touch of sweetness and a vibrant color contrast, frozen peas are your best friend. They require minimal prep – just thaw them quickly under warm water or add them directly to the warm sauce for the last few minutes. They're mild, appealing to many, and add a lovely freshness. Bell Peppers (Red, Yellow, Orange): While not as traditional, thinly sliced bell peppers (especially the sweeter red, yellow, or orange varieties) can add a beautiful color and a slight, refreshing crunch. I like to sauté them quickly beforehand to soften them up a bit and bring out their sweetness before mixing them into the pasta. Asparagus: For a more elegant touch, lightly blanched or roasted asparagus spears cut into bite-sized pieces are divine. They have a distinct flavor that pairs wonderfully with rich sauces like alfredo. Add them right before serving to keep them from getting mushy. Tips for Sneaking Veggies Past Picky Eaters (my kids included!): Remember how I mentioned my kids think veggies will “off them”? It's a real struggle! Besides chopping things finely like broccoli or using spinach that wilts away, try roasting veggies like carrots or zucchini on their own first. Roasting brings out their natural sugars, making them sweeter and often more palatable. You can even blend some roasted cauliflower into the sauce itself for extra creaminess and nutrition without anyone even knowing! Ultimately, the best vegetables are the ones you and your family enjoy. Don't be afraid to experiment! This snow day recipe showed how simple it can be to whip up a delicious meal, and with these veggie ideas, you can make your chicken alfredo even more wholesome and satisfying. Happy cooking!
