Homemade Calzones dough

I like to make homemade dough when I have some spare time in my day since I can do it in stages. To make these calzones I used a pizza crust recipe.

🍕

Ingredients:

2 cups of flour

2 tsp yeast

1/2 tsp sugar

1 cup warm water

1/2 salt

2 tbsp olive oil

🍕

Directions:

Mix the yeast, warm water and sugar in a bowl. Leave for 5-10 minutes until it looks frothy. Next mix in the flour and salt and knead on a floured board for 5 minutes until it forms a smooth an elastic shape. If it’s too sticky add a little flour. Next place the dough in an oiled bowl and let rest for at least 45 minutes or it has doubled in size.

I separated the dough into 4 smaller balls and let that rise again but not as long. Probably with the amount of dough and filling I had I could have made 6!

Filling for the calzones:

I cooked an onion, garlic, mushrooms and peppers. Then I cooked the Huera Picada till crispy. Next I mixed everything together with some tofu, 1/2 cup vegan cheese, fresh parsley, 🌿 oregano and salt and pepper to taste.

To assemble I spread the balls of dough into circles like mini pizzas. I spooned some brava/tomato sauce 🥫 and fillings on half then sealed them up. I drizzled oil on them and baked for 15-20 minutes till golden.

These were really delicious and I’m just kicking myself u didn’t make more or make them smaller. It was an experiment and a successful one at that so I can’t complain! I enjoyed them with more tomato sauce drizzled on top but would be even better with marinara.
