Chickpea flour fried oyster mushrooms

I love a good fried mushroom and any vegetable fried in garbanzo bean flour is just so tasty! I’m not too good at frying I don’t know if it’s because I’m just impatient for the oil to get hot enough or what. This time with the help of my husband we got it just right!

I think the trick is to really squeeze out as much water as possible from the oyster mushrooms.

Dredge dry mushrooms in slightly seasoned chickpea flour batter and then coat with bread crumbs.

Fry till golden in small batches and let excess oil drain on napkins.

We had them with patties or they can be enjoyed on their own as an appetizer too!
