Using leftover condensed milk for homemade matcha ice cream is a fantastic way to minimize waste while creating a delicious dessert that’s both simple and satisfying. The key to achieving the perfect texture without an ice cream machine lies in whipping the cream to soft peaks and blending it thoroughly with the condensed milk and matcha koicha paste. This technique helps trap air, making the ice cream fluffy even without churning. Matcha, a finely ground green tea powder, adds a distinct earthy flavor and vibrant green color, making the ice cream both beautiful and antioxidant-rich. The recipe’s optional addition of vanilla paste and a pinch of sea salt enhances the flavors, balancing the sweetness and bringing out the matcha's subtle bitterness. To maintain the ice cream’s soft texture, stirring the mixture every 3 hours during freezing prevents large ice crystals from forming. This hands-on step replicates the churning process in commercial machines and ensures a creamy consistency. For those wanting to customize, varying the amount of whipping cream adjusts sweetness and creaminess to taste. Additionally, using high-quality matcha powder improves both taste and the vibrancy of the ice cream. This recipe is perfect for matcha lovers looking for a quick and fuss-free dessert that can be made with simple ingredients and without any special equipment.
