Tequila & tomato sauce 🥫🥃

Perfect with pasta 🍝 or rice!

1 red onion

3 garlic cloves

1 tbs butter

1 tbs good quality oil/fat

Couple cherry tomatoes

1/3-1/2 cup tequila

1/2 to 1 cup of broth depending how saucy you want it

Pepper, salt, paprika, red pepper to taste

Fresh herbs and Parmesan to serve

Sauté 1 chopped red onion in 1 tbsp butter + 1 tbsp oil over medium heat until soft.

Add 3 minced garlic cloves and cook for 1 minute.

Add a handful of cherry tomatoes, cook until they start to burst.

Pour in ½ cup tequila, let it simmer and reduce for 2–3 minutes.

Add ½–1 cup broth, season with salt, pepper, and paprika.

Simmer 10–15 minutes until slightly thickened.

Finish with fresh herbs, Parmesan, red pepper flakes and serve.
