Purple Hash Browns Recipe

What you’ll need:

• 4 purple potatoes

• 1 tablespoon cornstarch

• 1/2 teaspoon salt (adjust to taste)

• A pinch of white pepper (optional)

• 1 tablespoon dehydrated onion flakes

• Eggs

• Oil for frying

Let’s make it:

1. Peel and Rinse Potatoes:

• Peel the purple potatoes.

• Rinse under cold water to remove excess starch.

2. Parboil

• Boil the peeled potatoes whole for about 6–7 minutes until just slightly tender.

• Let them cool completely (refrigerate for 30–60 minutes if possible) – this helps the texture.

3. Grate the Potatoes:

• Once cooled, grate the parboiled potatoes using a coarse grater.

4. Mix the Ingredients:

• In a bowl, combine the grated potatoes, cornstarch, salt, pepper, onion flakes and eggs.

• Mix gently – don’t overwork or it’ll get gummy.

5. Form the Hash Browns:

• Shape the mixture into oval patties (about 3–4 inches long and ½ inch thick)

6. Freeze extra patties if desired.

7. Fry:

• Heat vegetable oil in a pan to 350°F

• Fry patties for 3–5 minutes per side, or until golden brown and crispy.

• Drain on paper towels.
