🇹🇭 Thai-Style Ground Beef & Spinach Stir-fry

What you’ll need:

• 1 lb (450g) ground beef

• 2–3 cups fresh spinach (or 1 cup frozen, thawed and squeezed dry)

• 4 cloves garlic, minced

• 1–2 Thai chilies, finely chopped (or use chili flakes to taste)

• 1 small onion or shallot, sliced (optional)

• 1 tbsp oyster sauce

• 1 tbsp soy sauce

• 1 tsp fish sauce (or more soy sauce if skipping fish sauce)

• 1/2 tsp sugar (brown or white)

• 1 tbsp oil (neutral or sesame)

• Juice of 1/2 lime (optional, but adds great balance)

let’s make it:

1. Prep aromatics:

Mince the garlic and Wash and dry spinach.

2. Sauté aromatics:

Heat oil in a wok or skillet over medium-high heat.

Add garlic and onion, stir-fry for 30 seconds until fragrant.

3. Add ground beef:

Crank up the heat slightly.

Add the ground beef and break it up with a spoon.

Cook until browned and cooked through (about 6–8 minutes).

4. Season it:

Stir in oyster sauce, soy sauce, fish sauce, and honey.

Mix well so the beef is coated in the sauce.

5. Add spinach:

Toss in the spinach and stir-fry just until wilted (2–3 minutes).

Squeeze in lime juice if using, taste and adjust seasoning (more soy or fish sauce if needed).

6. Serve hot:

Over jasmine rice, with a crispy fried egg on top for that street food energy.
