SPICY TOFU STIR FRY (KETO) 🍋

Ingredients:

* 1 block firm tofu, drained and pressed

* 1 tablespoon olive oil

* 1 red bell pepper, diced

* 1 cup riced cauliflower

* 1/4 cup low-sodium soy sauce

* 1 tablespoon sriracha (or more to taste)

* 1 teaspoon ground ginger

* 1/2 teaspoon garlic powder

* Scallions, sliced, for garnish (optional)

Instructions:

* Crumble the tofu into a pan with heated olive oil. Cook until lightly golden brown, then remove from the pan.

* In the same pan, saute the diced red bell pepper for a few minutes. Add the riced cauliflower and cook until softened.

* Stir in the soy sauce, sriracha, ginger, and garlic powder. Cook for another minute or two, until heated through.

* Return the crumbled tofu to the pan and toss to combine. Garnish with sliced scallions before serving.
