How to Make Mapo Tofu🤍

Mapo Tofu is the ultimate comfort food. I grew up eating this dish, and it still hits every time. Here’s how to make it:

1️⃣ Prep the aromatics:

• Mince 1 stalk green onion, 2 shallots (or ½ onion), and 3 cloves garlic.

• Chop 1 mini red sweet pepper.

• Cut 1-3 dried chilis (adjust for spice).

2️⃣ Prepare the tofu:

• Cut 1 lb soft tofu into cubes.

3️⃣ Stir-fry the aromatics & pork:

• Heat 1 tbsp oil in a wok. Sauté the garlic, shallots, and chilies until fragrant.

• Add 8 oz ground pork, breaking it up as it cooks.

4️⃣ Build the sauce:

• Stir in 1.5 tbsp ground bean sauce and cook for a few seconds.

• Pour in 1 cup chicken broth, then add:

✅ 1 tbsp oyster sauce

✅ 1 tbsp light soy sauce

✅ 1 tbsp dark soy sauce

✅ 2 tsp sugar

✅ ½ tsp salt

✅ 1-3 tsp chili sauce (adjust to taste)

✅ 1 tsp sesame oil

5️⃣ Add the tofu:

• Gently stir in the tofu and simmer for 2 minutes.

6️⃣ Thicken the sauce:

• Mix 1.5 tbsp cornstarch + 2 tbsp water, then slowly add it to the pan.

• Simmer until the sauce thickens, then stir in chopped sweet pepper and half the green onions.

7️⃣ Garnish & serve:

• Top with the remaining green onions and serve over rice.
