Quick & Spicy Silken Tofu
I usually think of desserts for silken tofu but I wanted to make something for dinner and this quick and spicy noodle was right on. I thought the tofu would break up more and become shredded but it didn’t! Even after several minutes in the boiling soup.
Ingredients:
Silken tofu cut into one inch cubes
shiitake mushrooms 🍄🟫 onions 🧅 peppers 🫑 garlic 🧄 + any other veg or substitutions
2 cups veg broth
1 tbsp soy sauce
1 tbsp rice vinegar or white wine vinegar
2 tbsp chili oil
1 tsp sesame oil
1 tsp sugar
1 tbsp of cornstarch with 1/4 cup of water as thickener

Directions:
Cook the mushrooms, onions, and peppers till soft then add the broth, sauce ingredients and tofu. Let boil for a few minutes and add the cornstarch slurry. Cook for a few minutes more and serve with noodles or rice.
I like to cook the noodles in with the soup near the end because it saves some time but it can be hard to get all the noodles out of the pot and into my bowl.
