It's so light yet surprisingly hearty, and the flavors just sing together! One of the stars of this soup is definitely celery root. If you've never cooked with it before, you might think it looks a little bit like a 'troll root' from a fairytale garden – certainly not the prettiest vegetable on the outside! But trust me, once you peel away its rough exterior, you're left with a beautiful, subtly sweet, and earthy vegetable that is absolutely incredible. It's my secret weapon for creating a creamy texture in soups without needing any heavy cream or even potatoes. For those of you looking for a leek and celery soup without potatoes, this is your perfect answer! Celery root gives you that comforting richness without the starchiness, keeping the soup wonderfully light. Crafting this cozy soup starts simply. I begin by sautéing some finely chopped leeks, carrots, and a little bit of onion in a good swirl of olive oil. Cleaning leeks thoroughly is key – slice them, then rinse them well under cold water to get rid of any hidden dirt. As these vegetables soften, the aroma that fills your kitchen is just incredible; it truly sets the stage for a delicious meal. I let them cook down until they're really tender, almost translucent, which brings out their natural sweetness. Next, it's time for the celery root.
