🔥 Buttermilk Fried Chicken
📝 Ingredients
• 8 chicken drumsticks
• 1 quart buttermilk (enough to fully cover the chicken)
• 2–4 tablespoons Louisiana Hot Sauce (or up to ¼ cup for extra heat)
• ½ cup pickle juice (I used bread and butter pickle juice for a sweet-tangy flavor)
• Salt, black pepper, garlic powder, onion powder, celery salt, paprika, cayenne pepper, and Slap Ya Mama seasoning – all to taste
• 3 cups all-purpose flour
• 3 tablespoons cornstarch
• Oil for frying

🥣 Marinade & Prep
1. Season the drumsticks generously with salt, pepper, garlic powder, onion powder, celery salt, paprika, cayenne pepper, and Slap Ya Mama seasoning. Be sure each piece is fully coated—don’t be shy with the seasoning.
2. In a separate bowl, whisk together the buttermilk, hot sauce, and pickle juice.
3. Submerge the seasoned chicken in the marinade.
4. Cover and refrigerate for at least a few hours, preferably overnight, to let the flavors soak in. If you’re short on time, marinate for at least 30 minutes to an hour.

🍗 Breading & Frying
1. In a large bowl, combine the flour and cornstarch. Season this mixture well with the same spices used earlier.
2. Remove the chicken from the marinade, letting excess drip off.
3. Dredge each piece in the seasoned flour mixture until thoroughly coated.
4. Heat oil in a deep fryer or heavy pan to 350 °F.
5. Fry the chicken for about 10–12 minutes, or until golden brown, crispy, and cooked to an internal temperature of 165 °F.
6. Transfer to a paper towel-lined plate to drain before serving.
