maple cheesecake stuffed snickerdoodle cookies recipe

Ingredients

Maple Cheesecake Filling

* 225 g (8 oz) cream cheese, softened

* 60 ml (¼ cup) pure maple syrup

* 1 tbsp light brown sugar

* Pinch fine sea salt

Snickerdoodle Dough

* 1 cup unsalted butter, softened

* 214g (1 cup) granulated sugar

* 57g (¼ cup, packed) light brown sugar

* 2 large eggs, room temp

* 2 tsp pure vanilla extract

* 333 g (2 1/2 cups) all-purpose flour

* 2 tsp cream of tartar

* 1/2 tsp baking soda

* ½ tsp fine sea salt

Cinnamon Sugar Coating

* 100 g (½ cup) granulated sugar

* 2 tsp ground cinnamon

* pinch of fine sea salt

* Optional: 1 tbsp turbinado raw sugar for sparkle

Method

Step 1: Make the Maple Cheesecake Filling

1. In a medium bowl or ziplock bag, mix together cream cheese,  maple syrup, brown sugar, and salt. 

2. Mix until thick and creamy.

3. Using a ziplock bag or piping bag, pipe 12 - 1 tsp dollops onto a parchment lined baking sheet or plate, wrap tightly with plastic wrap and freeze for at least an hour 


Step 2: Make the Dough

1. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).


2. Beat in eggs, one at a time, then add vanilla.


3. In another bowl, whisk together flour, cream of tartar, baking soda, and salt.


4. Gradually add dry ingredients to wet until just combined. Chill dough 30 minutes (easier to wrap around filling).


Step 3: Assemble

1. Preheat oven to 175°C / 350°F. Line two baking sheets with parchment.


2. Stir together the cinnamon sugar coating in a shallow bowl.


3. Scoop about 2.5-3 tbsp of dough. Flatten slightly, place a cheesecake dollop in the center, and wrap dough fully around, sealing edges.


4. Roll sealed dough balls generously in cinnamon sugar.


5. Place on baking sheets, spaced at least 3 inches apart.

Step 4: Bake

1. Bake 12-14 minutes, until edges are set and tops are puffed (they’ll deflate slightly as they cool).



2. Let rest on trays 5 minutes before transferring to a rack.

OPTIONAL:

Use extra cheesecake filling to make icing by mixing with powdered sugar and milk til you get desired consistency!
