This isn't just a meal; it's a lifesaver on those busy weeknights or when you need a "QUICKIE LUNCH" that feels gourmet. Every time I make it, it's just "SO YUMMY," I can't get enough. What I love most about this shrimp and sausage yellow rice recipe is how simple yet robust the flavors are. We're talking juicy shrimp, smoky sausage, and tender, sweet peppers and onions all mingling together with perfectly cooked yellow rice. It's a one-pot (or mostly one-pot) wonder that minimizes cleanup, which is always a win in my book! Here’s how I usually whip this up. First, you'll need: 1 tbsp olive oil 1 lb shrimp, peeled and deveined 1 lb smoked sausage (andouille or kielbasa works great!), sliced 1 large onion, chopped 2 bell peppers (any color!), chopped 2 cups yellow rice (or regular rice with a packet of sazón or turmeric for color) 4 cups chicken broth (or water) Garlic powder, onion powder, paprika, salt, and black pepper to taste Fresh parsley or cilantro, for garnish (optional) Start by heating your olive oil in a large skillet or Dutch oven over medium-high heat.
