🌶️🧀 Cajun Chicken Sloppy Joes with Cheddar

Ingredients
For the Cajun Chicken Filling:
1 lb Ground chicken
1 tbsp Olive oil
1 small Onion, finely chopped
2 cloves Garlic, minced
2 tbsp Cajun seasoning
1 tbsp Tomato paste
½ cup Low-sodium chicken broth
½ cup Tomato sauce (canned)
1 tbsp Worcestershire sauce
1 tsp Brown sugar (optional, to round out the heat)
Salt, to taste
Freshly ground black pepper, to finish
For the Homemade Cheese Sauce:
2 tbsp Unsalted butter
2 tbsp All-purpose flour
1 cup Whole milk
8 oz Sharp cheddar cheese, freshly shredded
¼ tsp Paprika
For Assembly:
4–6 Brioche hamburger buns, split
Softened butter, for toasting the buns

Instructions
1. Cook the Chicken and Aromatics
Pour the olive oil into a large skillet over medium-high heat. Allow it to warm up.
Add the ground chicken, breaking it apart with a spatula, and cook for 5–7 minutes until no longer pink and slightly golden.
Toss in the finely chopped onion and cook for 3–4 minutes until translucent.
Stir in the minced garlic and Cajun seasoning, letting it cook for 1 minute until fragrant.
2. Build the Sloppy Joe Sauce
Stir in the tomato paste until the chicken is fully coated.
Pour in the chicken broth, tomato sauce, and Worcestershire sauce.
Lower the heat and let the mixture simmer uncovered for 8–10 minutes until thickened. Season with salt and optional brown sugar to taste.
3. Make the Cheese Sauce
In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute to create a pale roux.
Gradually pour in the whole milk while whisking constantly, cooking for 4–5 minutes until the mixture thickens enough to coat the back of a spoon.
Reduce the heat to low. Stir in the freshly shredded cheddar cheese and paprika, whisking gently until completely melted and smooth. (Avoid boiling the sauce once the cheese is added).
4. Toast the Buns
Butter the cut sides of your brioche buns. Toast them in a skillet over medium heat or under the broiler until golden brown and buttery.
5. Assemble and Serve
Spoon the warm Cajun chicken filling onto the bottom buns.
Ladle the rich cheese sauce generously over the top.
Dust with freshly ground black pepper, cap with the top bun, and serve immediately!
