Simple Tres Leches Cake

Ingredients:

For the Cake:

• 1 cup all-purpose flour

• 1 1/2 tsp baking powder

• 1/4 tsp salt

• 5 large eggs (separated)

• 1 cup granulated sugar (divided)

• 1/3 cup whole milk

• 1 tsp vanilla extract

For the Milk Mixture:

• 1/2 cup evaporated milk

• 1/2 cup sweetened condensed milk

• 1/2 cup heavy cream

For the Topping:

• 1 cup heavy whipping cream

• 3 tbsp powdered sugar

• 1/2 tsp vanilla extract

• 1 tsp ground cinnamon

Instructions:

1. Bake the Cake:

Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.

• In a bowl, mix flour, baking powder, and salt.

• In another bowl, beat egg yolks with 3/4 cup sugar until light and fluffy. Add milk and vanilla.

• In a third bowl, beat egg whites until soft peaks form, then slowly add the remaining 1/4 cup sugar and beat until stiff peaks form.

• Fold the egg yolk mixture into the flour mixture, then gently fold in the egg whites.

• Pour the batter into the dish and bake for 25-30 minutes. Cool completely.

2. Add the Milk Mixture:

• Combine evaporated milk, sweetened condensed milk, and heavy cream in a bowl.

• Poke holes all over the cooled cake with a fork and slowly pour the milk mixture evenly on top. Refrigerate for at least 2 hours or overnight.

3. Whip the Topping:

• Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread the whipped cream evenly over the chilled cake.

4. Dust with Cinnamon:

• Generously sprinkle ground cinnamon over the top for a sweet and spicy finish.

5. Serve and Enjoy:
