Daikon Soup with Beef🥩🥣
This is one of my dad’s favorite soup to make when it’s cold outside. It requires little ingredients, I mean SO LITTLE; anyone could make it!😋
Serves: roughly 12-15🤔
Ingredients:
*5 lbs beef plate aka beef finger meat
*5 lbs daikon (we used about 4-5 big daikons)
*big pot of water
*3 smashed ginger
*2 rock sugar
*salt and chicken powder to taste
*green onions for garnish
Directions:
1. Slice your beef plate into 2 inch pieces and parboil for about 5 mins
2. Rinse your beef plate until the water turns clear
3. Boil a big pot of water with 3 whole pieces of ginger (smashed)
4. Add in your beef and daikon in, let that simmer on medium low for at least an hour
5. After an hour, add in your rock sugar, salt, and chicken powder to taste. Let that simmer for another 30 mins
6. Garnish with green onions
You can drink the soup on its own or use it to cook noodles!😋🥩🍜
The beef plate literally comes out so tender, melt in your mouth and the daikon adds a sweet touch to the soup.
My dad also likes to make a sauce for the beef plate which consist of soy sauce, cooked oil, thai chilies, and sugar. I’m not too sure of the ratio, he kind of eye balls it!😅😅

There's nothing quite like a warm bowl of daikon beef soup to chase away the chill on a cold day. This recipe, a true family favorite, brings together the comforting sweetness of daikon and the rich, savory depth of slow-cooked beef into a beautifully clear and nourishing broth. I remember how the aroma would fill our kitchen, signaling that a truly satisfying meal was on its way. One of the secrets to achieving that melt-in-your-mouth beef is the cut. Using beef plate, also known as beef finger meat, is fantastic because it has just the right amount of marbling to become incredibly tender after a good simmer. If beef plate isn't readily available, you can also use beef short ribs or even a good quality chuck roast, cut into similar 2-inch pieces. The key is low and slow cooking to break down the connective tissues, resulting in that delightful texture in your *daikon soup w beef*. The parboiling step is crucial for a cleaner, clearer broth, removing impurities and ensuring the soup's pure flavor shines through. I always make sure to rinse the beef thoroughly until the water runs completely clear – it makes all the difference for a pristine, *clear beef soup*. The daikon, a versatile Asian radish, is truly a star here, adding a subtle sweetness that balances the richness of the beef. It softens beautifully during cooking, almost dissolving into the broth while imparting its unique flavor. Beyond its taste, daikon is also packed with vitamins and digestive enzymes, making this not just a delicious soup but a wholesome one too. Some people might wonder about specific regional styles, like Japanese beef daikon soup or *daikon Chinese soup*. While this recipe has a broad Asian influence, you can easily tweak it. For a more pronounced Japanese flavor, consider adding a dash of sake or mirin towards the end of cooking, or even using a dashi broth base. If you lean towards a Chinese profile, a few star anise pods or dried goji berries simmered with the beef can add another layer of aromatic complexity. My family's version keeps it simple, letting the natural flavors of the main ingredients speak for themselves. This daikon soup is incredibly versatile. While it's fantastic on its own, it also makes an excellent base for a hearty noodle soup. Just add your favorite noodles (rice vermicelli, udon, or egg noodles work wonderfully) to the hot broth with some beef and daikon. Beyond green onions, don't hesitate to experiment with other garnishes like fresh cilantro, a drizzle of sesame oil, or a sprinkle of white pepper for an extra kick. And for those who enjoy a bit of spice, a small amount of chili oil or sriracha can really elevate the experience. This recipe is designed to be forgiving and adaptable, encouraging you to make it your own and enjoy this heartwarming dish however you like it best.
