... Read moreAs someone who's always looking for delicious yet easy meal prep options, I've fallen head over heels for Korean Mayak Eggs, also known as Mayak Gyeran! These 'drug eggs' (named for how addictive they are!) have become a staple in my fridge, and I'm so excited to share some extra tips I've picked up along the way to make yours absolutely perfect. First, let's talk about that perfectly jammy yolk. The recipe calls for boiling eggs for 6-7 minutes, which is a fantastic starting point. I've found that for medium to large eggs, 6.5 minutes often hits that sweet spot for a creamy, runny center that still holds its shape. The immediate ice bath after boiling is crucial – not only does it stop the cooking process dead in its tracks, ensuring your yolk doesn't overcook, but it also makes peeling those eggs a breeze. There's nothing worse than struggling to peel a fresh egg! Now, for the star of the show: the marinade! You saw the five bottles of sauces and seasonings, including fish sauce, soy sauce, mirin, and sesame oil, neatly arranged. Each plays a vital role. For the soy sauce, I usually opt for a good quality, light-colored Korean soy sauce, but any good quality all-purpose soy sauce works. Mirin adds that essential touch of sweetness and gloss, while fish sauce provides an amazing depth of umami. And don't forget the sesame oil for its nutty aroma – it's key to that authentic Korean flavor profile. The array of fresh ingredients for the marinade are displayed on a wooden cutting board, including jalapeños, serrano peppers, red chili peppers, green onions, an onion, and a container of peeled garlic. While the recipe lists fresno and Korean chili, I often swap in serrano peppers or jalapeños when they're what I have on hand; they give a lovely, vibrant kick! Remember to taste your marinade before adding the eggs and adjust the sweetness with honey or the spice level to your liking. The diced garlic, green onions, and onion really infuse the eggs with layers of savory flavor. Once your eggs are peeled and your marinade is ready in a clear glass jar, it's time to combine them. Carefully place the several peeled, boiled eggs into the jar, making sure they're fully submerged in the flavorful liquid. Marinating them overnight truly allows the eggs to soak up all those incredible flavors, transforming them into golden, savory delights. They store beautifully in the fridge for 3-4 days, getting tastier each day! While a marinated Korean Mayak egg, topped with extra marinade, is served over a bowl of rice is my absolute favorite way to enjoy them – that Korean egg rice soy sauce sesame oil combo is just heavenly – these soy marinated eggs are incredibly versatile. I love seeing the close-up of a Korean Mayak egg being lifted from a glass jar filled with a savory marinade, garnished with sesame seeds, green onions, and red chili flakes, and they look just as appetizing sliced in half over a ramen bowl, tucked into a sandwich, or even as a protein boost in a salad. The mayak eggs Korean marinated eggs close up shots truly capture their appeal, especially when you reveal that beautiful soft, jammy yolk after slicing them in half. And that leftover marinade? Don't toss it! As the article mentions, you can absolutely reuse it. I often bring it to a boil to ensure it's safe, then use it to marinate chicken, tofu, or even some thinly sliced pork for another delicious meal. It's a fantastic way to maximize flavor and minimize waste!
