🍗 Creamy Balsamic Chicken with Roasted Onions & Sun-Dried Tomatoes

🛒 Ingredients
1.7 lb (≈ 8 pieces) boneless skinless chicken thighs
3 large yellow onions, thinly sliced
1 head garlic, top trimmed
½ cup sun-dried tomatoes, chopped
1 tbsp balsamic vinegar
Olive oil (a heavy drizzle)
1 tsp salt
1 tsp paprika
1 tsp Italian herb blend
½ tsp garlic powder
½ tsp onion powder
½ cup heavy cream
Fresh parsley, chopped (a handful)

👩🍳 Instructions
1️⃣ Preheat oven to 400 °F (200 °C). Grease a 9×13-inch baking dish.
2️⃣ Add sliced onions, chopped sun-dried tomatoes, balsamic vinegar, salt, paprika, and Italian herbs. Toss to coat. Nestle the garlic head, cut-side up, in the center. Drizzle with olive oil. Cover with foil and roast for about 1 hour, until onions are caramelized and soft.
3️⃣ While onions roast, pat chicken strips dry and season with garlic powder, onion powder, and a pinch of salt. Sear in a skillet with olive oil for 3-4 minutes per side until golden. Set aside.
4️⃣ Once roasting is done, squeeze the roasted garlic out of its skins into the dish. Stir in heavy cream and parsley. Add the seared chicken and toss gently to coat in the creamy balsamic sauce.
5️⃣ Return to the oven for 5 minutes to meld flavors.
6️⃣ Serve hot with mashed potatoes, rice, or roasted veggies to soak up the sauce.
