Creamy feta, roasted veggies, and perfectly baked eggs — a wholesome breakfast or brunch favorite!

Ingredients

1 cup cherry or grape tomatoes

1 red bell pepper, diced

1 red onion, diced

3 cloves garlic, minced

200g feta cheese

2 cups baby spinach, chopped

2 tbsp olive oil

1 tsp dried oregano

½ tsp sea salt

½ tsp dried thyme

¼ tsp black pepper

¼ tsp red pepper flakes

4 large eggs

Instructions

1️⃣ Preheat oven to 400°F (200°C).

2️⃣ In a baking dish, combine tomatoes, bell pepper, onion, garlic, and feta.

3️⃣ Drizzle with olive oil and sprinkle oregano, salt, thyme, pepper, and red pepper flakes.

4️⃣ Bake 25 minutes until veggies are roasted.

5️⃣ Stir in chopped spinach.

6️⃣ Create small wells and crack an egg into each one.

7️⃣ Bake 8–10 more minutes until eggs are set but yolks are slightly runny.

8️⃣ Garnish with herbs and serve warm with toast or pita.
