I love easy second night meals using ingredients from the previous night. This little salad was so good! Red leaf, cucumber, red and yellow mini bell pepper, green bell pepper, carrot, parsley, chopped roasted unsalted almonds, Kalamata olives. Also left over BBQ chicken from the night before.
