... Read moreHey everyone! If you're anything like me, a truly satisfying Chicken and Shrimp Alfredo is pure comfort food, but finding a recipe that hits all the right notes can be tricky. I've been experimenting to get that perfect creamy, flavorful sauce and juicy protein, and I'm so excited to share my detailed approach with you. It’s a bit more than just an ingredient list – it’s about bringing it all together for that perfect bite! First things first, let's talk about the stars of the show: your chicken and shrimp. For the shrimp, cleaning is key! Make sure to devein them and pat them dry. Then, I love to marinate them briefly with a squeeze of fresh lemon and lime juice, a dash of Goya, and a good sprinkle of cilantro lime seasoning. This really helps the flavors pop and keeps the shrimp succulent. For the chicken breast, I usually slice it into bite-sized pieces or thin cutlets so it cooks quickly and evenly. Season generously with lemon pepper, garlic pepper, a mix of Italian herbs, Goya, and a touch of onion powder. Getting these seasoned well before cooking makes a huge difference! Now, for the cooking process. I start by searing the chicken in a little olive oil until it's golden brown and cooked through, then set it aside. Next, the shrimp goes into the same pan – they cook very fast, usually just 2-3 minutes per side until they turn pink and opaque. Don't overcook them, or they'll get rubbery! While my proteins are cooking, I get my fettuccine noodles boiling in a large pot of salted water until they're al dente. Always save about a cup of that starchy pasta water – it's a secret weapon for a silky sauce! And now, the moment we’ve all been waiting for: the homemade Alfredo sauce! This is where the magic happens. In a large saucepan or skillet over medium-low heat, gently warm two cartons of heavy whipping cream. Once it starts to simmer slightly, whisk in two blocks of cream cheese until it's completely melted and smooth. This is my trick for extra creaminess! Then, gradually add your shredded or grated cheeses: Parmesan, mozzarella, Italian cheese blend, and a handful of crumbled feta (trust me on the feta, it adds a lovely tang!). Keep whisking until all the cheeses are melted and the sauce is smooth and thick. Stir in a hint of Italian seasoning and a generous dollop of lemon butter for that luxurious finish. If the sauce is too thick, a splash of that reserved pasta water will thin it out beautifully while helping it adhere to the pasta. Finally, it's time to bring it all together! Drain your fettuccine and add it directly to the Alfredo sauce. Toss well to coat every strand. Then, gently fold in your cooked chicken and shrimp. If you're adding broccoli, I recommend steaming or lightly roasting it beforehand and then stirring it in at this stage. Serve immediately, perhaps with a sprinkle of fresh parsley or more Parmesan. This dish is so comforting and genuinely tastes like something from a fancy Italian restaurant, but you made it right in your own kitchen! Enjoy!
