Loaded Baked Sweet Potato 🚨

This is a Must!!

Super simple Meal with the perfect combination of flavors, if you are okay with sweet potatoes and ground beef you’ll love it! ( Totally can substitute with tofu or black beans for a yummy meat free option!!)

✨How To Build the Bowl✨

• Start by placing your already roasted sweet potato down

•Add your ground beef (tofu/ bean/ veg) mixture on top of the potato

•Next add your desired about of cottage cheese( can sub with regular cheese or dairy free)

• Then scoop on the corn salad mixture (recipe below) on top of the bowl or you can enjoy it as a refreshing side!

• finally I topped it off with a good drizzle of hot honey, sprinkle of chili flakes and dried cilantro and Enjoy!

🔶How To Cook The Sweet Potatoes:

Honestly there’s many ways that you can go about cooking your sweet potatoes (boil, roast, grill) however you would like. For me I took the quick route for this one.

- start by rinsing off your potato

-pat dry

- take a fork and stab little holes scattered across the whole potato

- toss it in the air fryer and cook until the skin starts to puff and the potato reaches the desired softness you would like, personally I enjoy a crisp outside with a really soft inside.

- I normally just have my air fryer at 400 which is the highest temp mine goes and flip it about half way through to keep it from burning

🔹Side note: you can add oil on the outside of the potato to get a crispier skin and I don’t recommend wrapping the sweet potato in tinfoil because it causes the skin to get soft and almost slimy from steaming in the tin foil.

🔶How To Make The Beef:

- a single pound of defrosted beef to a medium heat pan (add more depending on amount of people, I was cooking for two)

- once the beef is about half way cooked (no longer pink) I drain any liquid, then I added some forced onion, zucchini and jalapeño letting it sauté with the meat

-to season I added garlic powder, chili powder, onion powder, mustard powder, paprika, sprinkle of basil.

🔶How To Make The Corn Salad

- I added a can of golden sweet corn, rinsed and drained to a bowl.

- Diced a quarter of an English cucumber and added it to the bowl plus a tiny sliver of a sweet onion finely minced

- For the sauce I used two spoonfuls of a plain coconut culture yogurt and a spoon of mayo. I seasoned it with cilantro, chili powder, cayenne, paprika, a sprinkle or coarse salt, onion and garlic powder and then squeezed in half a lime!
