Chicken Enchiladas
Chicken Enchiladas-
1 can Cream of Chicken Soup
8 oz. (One cup) sour cream
1 cup Pace Picante Sauce (Mild, or any heat of your choice)
2 tsp. chili powder
2 chicken breasts, cooked and chopped
4 c. Mexican Blend shredded cheese
8-10 large flour tortillas
2 tomatoes, chopped
1 bunch green onions, chopped
One 10 oz. can red enchilada sauce
Season chicken breasts with a little salt, pepper and garlic salt. Sear chicken in skillet on both sides till browned, about 3-4 minutes on each side. Place in oven in an ovenproof dish for 15-20 minutes at 425 degrees. Remove from oven and allow to cool. Once it is cooled, chop or shred.
In a large bowl, mix together soup, sour cream, picante sauce, 2 c. Mexican blend cheese, and chili powder. (Set aside the other two cups of cheese for garnish.) Mix together well.
Add chicken.
Spread about 3/4 cup of filling down the center of each tortilla. Roll and place in greased glass baking dish. Pour red enchilada sauce over enchiladas. Add remaining cheese, then top with tomatoes and green onions. Bake @ 350 degrees for 30-45 minutes.
Remove from oven and let rest for 10 minutes. Serve and enjoy!
