... Read moreOkay, so I have to share my absolute favorite weeknight dinner idea: this incredible Tater Tot Casserole! Seriously, if you're looking for ultimate comfort food that's super easy to throw together, this is it. It’s got that perfect blend of savory ground beef, creamy mushroom soup, and crispy tater tots on top – my family goes wild for it every time.
I usually make this when I'm short on time but still want a hearty, homemade meal. It truly hits the spot, especially on a chilly evening. And the best part? You probably have most of these ingredients in your pantry already!
Here’s my simple recipe for a delicious Ground Beef Tater Tot Casserole with Cream of Mushroom Soup:
What you’ll need:
1 lb ground beef
1/2 yellow onion, chopped
1 can (10.5 oz) Campbell's Cream of Mushroom SOUP (the classic!)
1 tbsp Worcestershire sauce
1 can (14.5 oz) Del Monte green beans, drained (or 1 cup frozen green beans)
2 cups shredded cheddar cheese
1 bag (32 oz) frozen tater tots
Let's get cooking!
Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large skillet over medium heat, brown the ground beef with the chopped yellow onion. Make sure to break up the beef as it cooks. Once cooked through, drain any excess grease.
Stir in the can of cream of mushroom soup and Worcestershire sauce with the beef and onion mixture. Mix it all up until it's well combined and heated through.
Next, spread the drained green beans evenly over the bottom of your prepared baking dish.
Pour the beef and soup mixture over the green beans, spreading it out evenly.
Sprinkle about 1.5 cups of the shredded cheddar cheese over the beef mixture. Save the rest for later!
Arrange the frozen tater tots in a single layer over the cheese. Don't worry if they're still frozen, they'll crisp up beautifully in the oven.
Bake for 30-35 minutes, or until the tater tots are golden brown and crispy, and the filling is bubbly.
During the last 5-10 minutes of baking, sprinkle the remaining 0.5 cup of cheddar cheese over the top of the tater tots. Pop it back in the oven until the cheese is melted and bubbly.
Let it rest for a few minutes before serving. This helps the casserole set a bit!
My Pro Tips & Variations:
Add more veggies: Sometimes I'll throw in some corn, diced carrots, or even sliced mushrooms with the beef.
Spice it up: A pinch of garlic powder or a dash of hot sauce in the beef mixture can really elevate the flavor.
Different cheese: Colby Jack or a Mexican blend works great too if you want to switch up the cheese.
Make ahead: You can assemble the casserole (without the tater tots) a day in advance, cover it, and refrigerate. Add the tater tots right before baking.
This casserole is such a hit every time. It’s warm, hearty, and just what you need after a long day. Give it a try, and let me know what you think!
