One of my favorite things about stuffed peppers is their versatility. You can easily customize the filling by using ground beef, turkey, chicken, or even adding plant-based proteins for a vegetarian twist. I usually stuff my peppers with a combination of cooked rice, sautéed onions, garlic, tomatoes, and herbs like parsley and oregano to enhance flavor. When selecting peppers, I prefer medium to large bell peppers that are firm and brightly colored—red, yellow, or orange—to add a vibrant look to the dish. Before filling them, I like to lightly blanch the peppers in boiling water for a few minutes. This softens them just enough so that they become tender after baking but still hold their shape well. For the filling, cooking the meat with onions and garlic first and seasoning it properly is key to achieving a rich taste. Adding some tomato paste or sauce ties everything together and keeps the mixture moist. Mixing in some cooked grains like rice or quinoa helps bulk up the filling and provides a nice texture. For my version, adding a sprinkle of shredded cheese on top before baking not only gives a beautiful golden crust but also adds a creamy contrast to the savory filling.
