INGREDIENTS
Salad:
• 1 can chickpeas (19oz), drained & rinsed
• 1 pint grape tomatoes, halved
• 1 cup cucumber, seeded & chopped
• ½ cup green onions, chopped
• ¼ cup fresh parsley, chopped
• 4 oz feta, cut into small cubes
Dressing:
• ¼ cup olive oil
• ¼ cup fresh lemon juice
• 3 cloves garlic
• 1 tsp sugar
• Salt & pepper to taste
DIRECTIONS:
• Add all salad ingredients to a large bowl.
• Blend all dressing ingredients until smooth.
• Pour dressing over salad and toss to combine.
• Cover and chill at least 30 minutes before serving.
