Ingredients:
1 Pack of spaghetti
2 tbsp olive oil
1 tbsp of butter.
4 cloves garlic, minced
1 small onion
Ginger
2 tbsp tomato paste
4–5 ripe tomatoes, chopped and blended
1 red bell pepper
Salt to taste
Spices/ herbs: Curry, thyme, paprika, chicken bouillon.
Fresh basil or parsley, for garnish
Grated Parmesan (optional)
Instructions:
Cook spaghetti according to package instructions. Reserve 1 cup of pasta water before draining.
In a large skillet, heat olive oil and butter. Sauté onion, garlic, and ginger until soft.
Stir in tomato paste and cook for 1–2 minutes to caramelize.
Add fresh tomatoes, red pepper blend, salt, pepper, Curry, thyme, paprika, and chicken bouillon. Simmer for 10–15 minutes, breaking down the tomatoes.
Add cooked spaghetti and a splash of pasta water to loosen the sauce. Toss until coated.
Garnish with basil and cheese if desired.
