I've been perfecting this recipe, and honestly, they're even better than what you get at restaurants – and way healthier because we're baking them. If you're looking for a satisfying appetizer or a fun weeknight meal, these crispy baked Southwestern egg rolls are an absolute must-try. One of the best things about making these at home is how customizable they are. For the filling, I love a hearty mix of cooked chicken, black beans, sweet corn, diced jalapeños for a little kick, fresh spinach, and a generous amount of Monterey & pepper jack cheese. It's that perfect blend of savory, spicy, and cheesy that makes every bite amazing. Getting Your Filling Ready: First things first, make sure your chicken is cooked and shredded. A rotisserie chicken works wonders here for a quick shortcut! If you're cooking it from scratch, just boil or bake some chicken breasts and shred them. Next, rinse your black beans thoroughly and drain them. This step is key to avoid a starchy texture. For the spinach, I like to give it a quick sauté in a little olive oil until it wilts down – it helps release excess moisture and concentrates the flavor. Then, just mix all your filling ingredients in a big bowl: the shredded chicken, black beans, corn, diced jalapeño (remove the seeds if you prefer less heat!), the wilted spinach, and both cheeses. Give it a good stir to ensure everything is evenly combined. The Art of Rolling (Southwestern Spring Rolls Style!): This is where the magic happens! Lay an egg roll wrapper flat on a clean surface with one corner pointing towards you (like a diamond). Spoon about 2-3 tablespoons of your delicious Southwestern filling just below the center. Now, fold the bottom corner up over the filling, tucking it in tightly. Then, fold in the left and right corners towards the center. Finally, roll the egg roll tightly from the bottom upward, creating a neat cylinder. This ensures your Southwestern spring rolls stay perfectly intact during baking. Repeat with the remaining wrappers and filling. Baking for Perfection: Preheat your oven to 400°F (200°C). For that beautiful golden-brown crisp, I like to lightly brush the tops of each egg roll with a little olive oil or cooking spray.
