From my journey, the key to a great doughnut lies in the dough preparation and frying technique. Start by ensuring your yeast is fresh and activated properly; this makes the dough light and airy. Mixing the ingredients until smooth and letting the dough rise in a warm spot helps develop the flavor and texture. When it comes to frying, maintaining the right oil temperature around 350°F (175°C) is crucial. Too hot, and the doughnuts brown too quickly without cooking through; too cool, and they absorb too much oil and become greasy. Using a slotted spoon or spider, gently lower the doughnuts into the oil and fry them until golden brown on each side. For glazing, creating a simple mixture of powdered sugar, milk, and a hint of vanilla extract yields a shiny, sweet coating that complements the softness inside. I learned that dipping the doughnuts quickly into the glaze and placing them on a wire rack allows excess glaze to drip off, preventing sogginess.
