For the bottom layer, after browning your ground beef, don't forget to drain off any excess fat. This keeps your pie from being greasy and ensures a cleaner flavor. Then, I love to sauté some finely diced onions (if you're adding them – I highly recommend it for extra flavor!) before adding the beef back in. Once the beef is browned, stir in your peas, carrots, corn, and green beans. The cream of mushroom soup is a fantastic secret weapon for a rich, savory base that thickens beautifully and adds a wonderful umami depth. Don't skimp on the Worcestershire sauce – it adds a wonderful tang and enhances the savory notes! Mix in the milk, salt, pepper, onion powder, garlic powder, smoked paprika, and Italian seasoning. Let it simmer for a few minutes to let all those flavors meld together. This is where the magic really happens, building that hearty foundation for your pie. Now for the star topping: creamy mashed potatoes! I always start with peeled and cubed potatoes, boiled until fork-tender. This is crucial for smooth, lump-free mashed potatoes. Once drained, return them to the hot pot for a minute or two to dry out a bit – this prevents watery mashed potatoes. Then, add the heavy cream, generous pats of butter, and a dollop of sour cream.
