Warm Homemade Apple Pie with Vanilla Ice Cream
Crust:
Mix 2½ cups flour, 1 tsp salt, 1 tsp sugar
Cut in 1 cup cold cubed butter until crumbly
Add 6-8 tbsp ice water, 1 tbsp at a time, until dough forms
Divide in half, wrap, chill 1 hour
Filling:
Combine 6 cups sliced apples, ¾ cup sugar, ¼ cup brown sugar
Add 2 tbsp flour, 1 tsp cinnamon, ¼ tsp nutmeg, 1 tbsp lemon juice, 1 tsp vanilla
Toss well and let sit 15 minutes
Assembly:
Roll out bottom crust, place in 9" pie dish
Add filling, dot with 1 tbsp butter
Cover with top crust or lattice, seal edges
Brush with egg wash (1 egg + 1 tbsp milk)
Sprinkle with coarse sugar
Baking:
Bake at 425°F for 15 minutes
Reduce to 375°F, bake 40-45 minutes until golden
Cool 1 hour before slicing
Serve warm with vanilla ice cream
