Sourdough cinnamon rolls
5 cups AP flour
1 1/2 c water
6 tbs butter
1/3 c sugar
1 c sour dough starter OR 1 c discard plus 1 1/2 tbs active dry yeast
1tsp salt
CINNAMON MIXTURE
1 stick butter (doesn’t matter if it’s salted or not) softened
A bag of brown sugar
Container of cinnamon
Wash your hands you will be using them
In your kitchen aid pour half your flour salt and sugar mix until combined
While that is mixing take your butter and place it in your water microwave for 40-60 seconds BUTTER will not be completely melted (if it is that’s okay too)
Pour butter and water and sourdough starter into flour with your dough hook and mix add the rest of your flour mix until just combined on low. After it’s combined turn your kitchen aid up to medium high and lock the lid!!! Mix until your dough is smooth and turns into a ball on your dough hook. If it’s dry add more water. If you add too much it’s okay to dust it with more flour. Once a ball has formed on your dough hook turn off your kitchen aid and remove your dough to a lightly floured surface. Preheat your oven to 375 degrees Fahrenheit. Take your dough and sprinkle the top with flour. roll out into a large rectangle about 1/2 inch thick. I personally trim the edges with a pizza cutter so I have a perfect rectangle. Take your butter and smooth out on your dough edge to edge. Take your bag of brown sugar (doesn’t matter if it’s light or dark) and pour a generous amount on to your dough. I use my hands and spread it out evenly edge to edge! Shout be about this thick of a layer ➡️ ||| Wash your hands. Take your cinnamon and sprinkle all over the sugar. Using your hands again mix it into the sugar edge to edge. Now take your dough and roll it up as tight as you can. Roll it towards you till the seam is in the bottom. Using a knife and a sawing motion!!!! A sawing motion keeps you from smushing your dough! Any ways. Cut both ends off and discard. You should now have a perfect log of dough. Using the sawing motion cut your cinnamon rolls about 1 1/2 inch thick or as thick as you like them Place your cut rolls in to a buttered 9 x 12 baking dish making sure they are all touching. Pour heavy whipping cream over each roll I didn’t measure I just lightly covered each roll. Cover them and place them on your oven for 30 minutes to rest and slightly rise. They won’t look like that have risen much but it’s okay they will rise the rest of the way in the oven. Bake for 20 minutes or until lightly golden. You don’t want them tooo golden or they will be crunchy just a nice yellowish golems color, then allow to cool for 15 minutes. I did not have to glaze these as they made their own glaze pull it out of the pan one by one scraping the bottom of the pan and place on a plate upside down. That’s where all your glaze will be. If you still want to glaze them it’s 3/4 c soften butter 3-4 c powdered sugar a splash of salt and vanilla.
