Strawberry Cheesecake Crumbl Cookies
Ingredients:
For the Sugar Cookie Base:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
2 tsp vanilla extract
2 ¾ cups all-purpose flour
2 tsp baking powder
½ tsp salt
For the Cheesecake Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
2 tbsp heavy cream (for smoothness)
For the Topping:
1 cup fresh strawberries, diced
½ cup graham cracker crumbs or cookie crumbles
Optional: strawberry glaze for extra shine
Instructions:
Step 1: Make the Sugar Cookies
Preheat your oven to 350°F (175°C).
In a large bowl, cream together the butter and sugar until light and fluffy.
Add the egg and vanilla extract, mixing well.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually mix the dry ingredients into the wet until a soft dough forms.
Scoop the dough into large balls, slightly flattening them on a lined baking sheet.
Bake for 10-12 minutes until the edges are just set. Cool completely.
Step 2: Prepare the Cheesecake Frosting
Beat the cream cheese and butter together until smooth and creamy.
Gradually add in the powdered sugar, beating until fluffy.
Stir in the vanilla extract and heavy cream for a silky finish.
Step 3: Assemble the Cookies
Pipe or spread a generous swirl of cheesecake frosting onto each cooled cookie.
Top with a handful of diced strawberries.
Sprinkle with graham cracker crumbs for that classic cheesecake crunch.
(Optional) Drizzle with strawberry glaze for added flavor.
