High Protein Pumpkin Yoguest Bark 🧡

Pumpkin Yogurt Bark is a perfect fall treat! It’s high in protein and packed with fibre🧡

Ingredients:

2 cups plain greek yogurt

1-2 tbsp of sweetener of choice

2 scoops protein powder or collagen powder

1 teaspoon vanilla extract

1/3 cup of pumpkin granola (I used simply Elizabeth pumpkin)

1/4 cup of pumpkin seeds

1-2 tsp of pumpkin spice

1/3 cup of pumpkin puree

Drizzle of 1 tbsp of PBFIT butter (optional)

Method: Mix yogurt, sweetener, vanilla extract and protein powder until fully combined. Pour mixture onto a sheet pan with parchment paper. Add all the toppings and freeze until firm or 3-4 hours.
