RECIPE:
Ingredients:
- 250g dry orzo
- 600g chicken breast
- 1 tbsp pesto
- 1 tbsp basil paste
- 2 tbsp light cream cheese
- 2 .5 cups chicken broth
- 1 punnet cherry tomatoes, halved
- spinach (eyeballed)
- 200g frozen or regular broccoli florets
- 40g parmesan, grated
- Zest + juice of 1 lemon
CHICKEN MARINATE
- 1 mingle Peri peri seasoning packet
- 1 tbsp garlic paste
- Salt + pepper
Method:
Cut the chicken breast into tender sized strips. Then coat the chicken in peri peri seasoning, garlic paste, salt + pepper. Let the chicken sit for at least an hour in the fridge to marinate.
Air fry the chicken at 190°C for 8–10mins then flip and cook for another 8–10. Let the chicken rest and then slice.
In a large pan on medium heat, add chicken broth and orzo. Cook for 8–10mins, (stirring occasionally) until most liquid is absorbed. Add more water or stock if needed.
Next stir in the cream cheese, pesto, lemon juice, lemon zest and basil paste until melted and creamy.
Add broccoli, spinach, tomatoes, salt + pepper and cook for a further 2–3 mins until tender and wilted.
Serve orzo topped with sliced peri peri chicken and a sprinkle of parsley.
